Meet Your Butcher:

Victor Cruz

A butcher is a person who not only cuts up beef or pork but also has a knowledge of the many different muscle groups and how they contribute to the yield and quality of meat. They are professionals, but also artists, skilled craftsmen who pride themselves on their work. Victor has been a butcher for almost 40 years. America has grown into a nation of diverse preferences and food experiences. Victor's Meat Market will grow with it, but some things haven't changed, though. He has been married for 36 years to his wife, Sarita. They have 3 kids, and 4 grandkids. Victor's Meat Market is family owned and operated.

Don't get stuck eating low quality, grocery store meat. You can count Victor as your best choice butcher for custom cut beef, pork, and poultry meats. He used his skill to bring you the best cut portions to make beautiful dishes created with respect for animals and the environment. He won't push anything for his own benefit; he just wants his customers to be amazed by flavor and texture. You'll see him behind the counter, calm and focused only on the meat laid out before him. A man of quiet confidence, he knows everything about what he sells. He's all about savoring the experience; from BBQ's, family fiestas, holiday gatherings, to everyday meals. He is a meat expert.

Victor is the first born of 9 children. He was always part of a team, but a natural born leader. Born and raised in New Jersey, he always had an appreciation for meat since his first official meat job working at a meat plant in Jersey City, New Jersey. This is why the butchering industry has always piqued his interest. He's been a security guard and an ice cream truck owner, but he's never known more about anything else than he does in butchery. His mother was a major culinary influence in the household having to fill 9 bellies. She wasn't a chef, but coming from the Puerto Rican culture, meat was a staple in many meals growing up. Puerto Rican food has influences from Spain, Africa, and it's native Taino Indians, creating unique aromatic flavors and tasty ingredients. Meat and poultry are often prepared by rubbing in adobo. Pork is cooked in a variety of of ways, including stewed pig in sofrito sauce. A Puerto Rican beef pot roast is carne mechada. Chicken is often served in asopao, a soup with rice. If you would like to know more, feel free to ask the butcher.

Victor is all about making his customers feel like family. They want to educate you on how to cook healthy and affordable meals so that every time you come to Victor's Meat Market, you know you're getting the best of the best.

When you're destined to do something, anything else is a distraction. We all have a purpose, and Victor's purpose is to be the best butcher he can be. No matter how high-tech the world becomes, there will always be a need for good old-fashioned butchers.

Warmest wishes from all of us here at Victor's Meat Market!
